Banana Nut Bread
What's life without a yummy slice of banana nut bread? It's nothing. That's what. It's time to start living so make this ASAP.

Makes 1 loaf

Ingredients:
3 ripe bananas (peeled and mashed)
1/2 cup almond or soy milk
1/3 cup oil
2.5 oz brown sugar (about 1/2 cup)
2 tsp vanilla

10 oz flour (about 2 cups)
2 tsp baking soda
1 tsp baking powder
1/4 tsp salt

2.5 oz chopped pecans or walnuts (about 3/4 cups)

Directions:
Preheat the oven to 350° F.

Grease the sides of a 9" loaf pan and line the bottom with parchment paper.

In a medium bowl combine the flour, baking soda, baking powder and salt and whisk together.

Mash the bananas with a fork until they are good and mushy. (note: It's best to use very ripe bananas with lots of brown spots.)

In a large bowl combine the almond or soy milk and oil. Then add the banana, brown sugar and vanilla and mix with a whisk.

Add the wet ingredients to the dry and mix until almost combined.

Add the chopped pecans. Gently mix the batter until just combined. Do not over-mix!

Pour the batter into the prepared pan. (optional: Top with an crumble made of 1/4 cup quick oats, 2 Tbsp margarine, 2 Tbsp minced nuts, 1 Tbsp flour and 1 Tbsp brown sugar)

Bake at 350° F for 45-50 minutes. Test the bread with a toothpick to see if it's done. If the toothpick doesn't come out clean, bake for a few more minutes and test again.
