I'm not going to lie. I am OBSESSED with these muffins. They may be my favorite thing that I make. Be warned that unless you have friends or loved ones to share them with you will be tempted to eat them all. 

Makes 9 muffins

Muffin Ingredients:
11 oz flour (about 2 1/4 cups)
1 Tbsp baking powder
1/2 tsp baking soda
1/2 tsp salt

3/4 cup orange juice*
1/2 cup oil
1/2 cup soy milk
4 oz sugar (about 1/2 cup)
1 tsp vanilla

3 Tbsp water
1 Tbsp egg replacer (recommend Bob's Red Mill)

zest of two oranges (divided)

Orange Glaze Ingredients:
1/2 cup powdered sugar
4 tsp orange juice

*Depending on the size of your oranges, you may have enough juice from the two oranges that you zest to give you all the juice you need. Most likely the oranges will only give you closer to 1/2 cup of juice so you may need to supplement it with a bit more.

Directions:
Preheat the oven to 350° F.

Spray or well-grease a muffin tin. 

In a large bowl combine the flour, baking powder, baking soda and salt and whisk together. 

In a small bowl add the water and egg replacer. Stir and set aside to allow the egg replacer to activate.

Zest two oranges and set the zest aside.

In a medium bowl combine the orange juice, oil, soy milk, sugar and vanilla. Mix together with a whisk until well combined.

Add the egg replacer and most of the zest. (reserve some zest to use to decorate the tops of the muffins!) Stir to combine.

Add the wet ingredients to the dry and mix until just combined. Do not over-mix!

Fill each muffin tin to the top so you'll have a nice "muffin top" when they bake.

Bake at 350° for 22 minutes. Test the muffins with a toothpick to see if they are done. If the toothpick doesn't come out clean, bake for a few more minutes and test again.

Remove the muffins from the tin immediately (and carefully). Cool the muffins completely on a wire rack.

As the muffins cool, prepare the glaze by stirring the 4 tsp of orange juice into the powdered sugar until it's a nice smooth consistency. 

When the muffins are cool, drizzle each one with some of the glaze how ever you see fit and then sprinkle on a bit of the reserved orange zest on top.
