If I'm not having my beloved pancakes for breakfast, I'm perfectly content to fill my tummy with some magnifique French Toast. I have found a lot of vegan French Toast recipes to be less than satisfying, though. I'm a firm believer in only calling a vegan version of a classic dish by the same name if it actually tastes like (and has the same texture of) the original. This recipe will absolutely deliver on that promise. 

Note: It's important to use stale bread for this recipe. This will ensure that your French Toast won't be squishy. If you like your French Toast to be squishy, please know that I am judging you.

Makes 1 loaf (roughly 12 pieces depending on your slice thickness)

Ingredients:
1 loaf of stale french bread cut into 1 - 1 1/2 inch slices

8 oz tofu (I use extra firm but honestly any type will work since it will be well blended)
1 cup almond/soy milk
1 Tbsp flour
1 tsp sugar
1 tsp cinnamon
1/4 tsp nutmeg

Directions:
Cut a loaf of stale French bread (not a baguette) into 1 to 1/2 inch slices.

In a blender combine the tofu, soy milk, flour, cinnamon, sugar and nutmeg. Blend until smooth to create the custard.

I use a 9" x 13" inch baking dish for this next step but any shallow container will do. The 9" x 13" baking dish allows me to get about half of a loaf done at once so it works nicely. 

Pour enough of the custard into the baking dish to just cover the bottom. Place slices of the bread in the custard and then drizzle more custard on top to coat each piece. Allow the bread to soak for a few minutes while you heat a griddle or skillet over medium heat.

Ideally, the griddle should be 375 degrees F to cook the French Toast. I have a laser thermometer that makes life much easier for these situations. If you don't have one, just test the griddle by flicking small splashes of water onto it. If the water sizzles and evaporates quickly, the griddle should be hot enough.

Lightly oil the griddle and then gently place the slices of soaked bread onto it and allow them to cook until golden brown on each side. It should take about 3 to 5 minutes on each side over medium heat. 

Keep the cooked slices on a plate in a warm oven as you continue to soak and cook the remaining slices.

Serve with a side of fresh fruit and top with real maple syrup (of course).
